1 1/2 sticks (6 ounces) unsalted butter, cut into cubes
6 ounces semisweet or bittersweet chocolate, choppped
3 large eggs plus 2 large egg yolks
1/4 cup plus 2 tablespoons granulated sugar
4 1/2 tablespoons flour
10 choc.-caramel or plain caramel candies (your choice)cut into pieces
Confectioners sugar for dusting

Preheat oven to 450 degrees. Grease and flour six 6-ounce ramekins. In a double boiler, melt the butter and chocolate over simmering water, whisking until smooth. Remove the insert from the pan.
Using an electric mixer, beat the whole eggs, egg yolks, and granulated sugar at high speed until pale and very thick, around 8 minutes. Whisk in the chocolate mixture, then the flour until just combined.
Divide the batter among the prepared ramekins and submerge a stack of 4 chocolate-caramel pieces in center of each. Place ramekins on a baking sheet and bake until set but still slightly jiggly in center, around 12-14 minutes.
Invert the cakes onto plates, wait 20 seconds and remove ramekins. Dust with confectioners sugar and serve immediately.

Berry-Glazed Loaves

1 egg beaten
1/3 cup milk
1/3 cup quick cooking rolled oats
2 tablespoons finely chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound ground lean beef
1/4 pound bulk sausage (flavor of your choice)
8 ounce can of whole cranberry sauce
2 teaspoons of lemon juice
3 tablespoons of brown sugar

Mix all ingredients above together thoroughly and shape into 5 individual loaves. Place into a 13x9x2 inch baking dish. Combine 8-ounce can whole cranberry sauce, 3 tablespoons brown sugar, and 2 teaspoons of lemon juice, set aside. Bake loaves at 350 degrees for 30 minutes. Spoon on sauce, then bake an additional 15 minutes. Remove loaves from hot dish. Skim fat from sauce with spoon and throw out. Then pour hot berry sauce back over loaves. Very Yummy!!! Serve with steamed veggies and a nice salad. Will make a beautiful dinner plate for that special valentines day. Top it off with an elegant chocolate dessert. Enjoy!!!!!!
