- 2 eggs
- 2 cups sugar
- 1 tsp cocoa
- 2 ounces red food coloring
- 2 sticks real butter
- 2 1/2 cups cake flour
- 1 tsp salt
- 1 cup buttermilk
- 1 tsp. real vanilla
- 1/2 tsp baking soda
- 1 tbsp. vinegar
Preheat oven to 350 degrees, Beat your eggs, and add sugar slowly. Mix the cocoa and food coloring. slowly mix in your softened butter into your egg mixture. Mix well. mix your flour and salt together, while adding your buttermilk alittle at a time, mix in the flour, alternating. Blend in the vanilla. In another bowl add your soda and vinger together and then add it into your mixture. Pour into (3) nine inch round greased and floured cake pans. Bake about 20-25 minutes.
Use your favorite icing: A white creamy icing is the best. My husband loves a cream cheese icing. Or you can use this home made icing.
- 2 egg whites
- 1 1/2 cups of sugar
- 5 tblp of cold water
- 2 tbsp light corn syrup
- 1 cup miniature marshmallows
- 1 cup shredded coconut (optional)
Cook egg whites, sugar, water, and corn syrup in double boiler for 5 minutes and beat. Add marshmallows, stir until melted. If your want coconut, blend in and spread between layer and all over (cooled) cake.
